SIRHA 2026 Public Catering Roundtable Discussion

Dr. András József Tóth, representing the InDeRe Food Research and Innovation Institute, participated in and moderated the "Public Catering - REL Roundtable" professional discussion held at the SIRHA 2026 exhibition. The event centered on the conditions under which domestic producers can integrate into the public catering supply chain.

During the discussion, significant attention was given to quality assurance requirements, logistical expectations, pricing, and continuous supplier compliance. Participants came from diverse professional fields, providing a comprehensive perspective on the topic from regulatory, economic, commercial, and food chain safety standpoints.

A key takeaway from the roundtable was the increasing demand among public catering stakeholders for reliable, traceable, and high-quality domestic ingredients. However, it also became clear that several factors hinder producers' market access, including ensuring consistent product volume, administrative compliance, and uniform quality performance.

The professional dialogue generated several practical suggestions for strengthening the relationship between producers and public catering stakeholders. The discussion contributed to a clearer understanding of the opportunities and challenges in developing the domestic supplier system.
