Public catering models play a crucial role in maintaining children’s health and ensuring proper nutritional status. Since children spend a significant portion of their day at school, the quality and quantity of meals consumed there greatly impact their health.
Current regulations specify the required energy and nutrient intake for different age groups and define the amount of raw ingredients per portion. However, they do not provide indicators for the actual amount of nutrients consumed.
To prevent malnutrition and deficiencies in macro- and micronutrients, it is essential to examine both the quantity and composition of the meals children actually eat.
At Indere Nonprofit Ltd., we have been measuring for years the quantity of food served in public catering institutions and the amount of food returned to the kitchen after meals, broken down by food type. This provides clear insights into what percentage of the legally prescribed portions are actually consumed and how much of the required energy and macronutrients are taken in by the children.
